fermentation for 30 days at maximum 22°C for 50% in cuves and 50% on wood.
Maturation: 12 months sur lies of which 50% in cuves and 50% on wood.
Assembly 6 months in cuves and 1 year in bottle.
Potential storage time: between 4 and 6 years.
Serving: 12 ° - 14 ° C.
